■ What
is "Natto"?
Natto,
made from soybeans, is a kind of Japanese traditional
fermented food. By Adding the "Natto bacteria"(BacilLus
subtilis var, natto) into boiled soybeans for fermenting,
some white foam appears on the end products. There will
be stick silks between Natto.
The health food classified as the national
treasure by Japan, Natto, possesses excellent value
of nutrition, and thus, becoming one of the best fermented
foods. Natto comes originally from soybeans, which are
the abundant resources of superior protein, and contains
8 kinds of essential amino acid of human body. Natto
also consists of amylase and protease that are the enzymes
for promoting food digestion and metabolism.
The most noticeable
composition in the natto is the NattoKinase.
It is the enzyme produced by the Natto bacteria after
the ferment in soybeans, and is of quite active function
of physiology.
The history of the Japanese natto eating
has lasted for more than 1000 years. The record: "Natto
is an natural antibiotic." appeared in one of the
Japanese history book written in the medieval times.
Medical doctor Hiroyuki Sumi researched
among 230 different kinds of foods, and finally found
high concentration of natural thrombus dissolving enzyme,
later named NattoKinase, from Natto in 1986.
Thrombi often formed and dissolved in
our body, howerver, with the effect of aging, long-term
pressure and tension, they generated faster than decomposed.
When thrombi accumulated, they would
be transformed into insoluble protein fibers and cause
cardiovascular disease. M.D. Hiroyuki Sumi had once
used the medicine, often taken by patients of cerebral
thrombus, on a fixed volume of artificial thrombus to
test the dissolving efficiency, and it took the drug
one night to promptly dissolve; in the same condition,
however, one NattoKinase extracts food only spent 3
hours to complete.
In
addition, natto bacteria also benefit whole intestines
and prevent constipation.
It
is proved by the experiment that the beneficial functions
to the digestive system of natto bacteria is superior
to those of common lactic acid bacteria. Because most
of good bacteria in yogurts intaken orally will be killed
by gastric juice before reaching intestine; natto bacteria
will, however, turn themselve into endospore to wait
for better condition in the bad environment. Although
natto bacteria can be destroyed by gastric juice, endospores
in the digestive system grow, reproduce, and secret
numerous nutrients which are apt to be absorbed by human
body.
Reasearch also discovered
flourish phospholipid, unsatured fatty acid, and other
active nutrients from natto bacteria. These nutrients
are helpful for improving physiology, reducing complex
sydromes of climacteric, preventing blood vessels from
wearing out, restraining fat accumulation, and promoting
basic metabolic rate.
